CHOCOLATE BANANA COCONUT MACAROONS

INGREDIENTS

2 very ripe bananas

1¼ cups desiccated coconut

2 ½ tablespoons melted coconut oil

2 ½ tablespoons cocoa powder

2 scoops Adrenal Switch (chocolate or salted caramel)

METHOD

  1. Peel and mash the very ripe bananas.
  2. Mix in the coconut with the mashed bananas.
  3. Spoon a heaped tablespoon of the mixture and roll into a ball then flatten.
  4. Bake at 180C for about 15 mins until they start to go golden. Leave to cool.
  5. Melt the dark chocolate and add two scoops of Adrenal Switch to the mixture. 
  6. Dip the banana macaroon into the chocolate then place on greaseproof paper to cool.
  7. Store in the fridge until ready to eat.
