RECIPE - PEACH YOGHURT BREAD

PEACH YOGHURT BREAD

INGREDIENTS

1 1/3 cup flour of choice

1/3 cup coconut sugar

1/3 cup maple syrup

¼ cup coconut oil

1-2 peaches or peach slices from a tin, drained.

½ cup blueberries

½ cup yoghurt of choice

½ lemon zest

½ tsp apple cider vinegar

¼ tsp vanilla extract

1 tsp baking powder

½ tsp bi carb

Pinch of salt

1 serve ADRENAL Switch - Peaches and Cream

METHOD

  1. Preheat oven to 180 degrees Celsius
  2. Line a loaf tin with baking paper
  3. Cut peaches into slices
  4. Sift flour, baking powder, bicarb and Adrenal Switch Peaches and Cream together in a bowl
  5. In a separate bowl beat oil, coconut sugar, syrup, yoghurt, lemon zest, salt, vinegar and vanilla extract until creamy
  6. Add dry ingredients to the wet mixture while beating. Beat until combined. Don’t overmix. 
  7. Transfer to loaf tin. Place sliced peaches on top with blueberries
  8. Sprinkle with powdered coconut sugar, if desired
  9. Bake for 30-35 minutes or until golden
