Pea, Mint and Feta Frittata Muffins

Ingredients
- Free Range Eggs
- Crumbled Feta
- Grated Cheese
- 100ml Coconut or Almond Milk
- 1 Clove Crushed Garlic
- Pinch Sea Salt
- Pinch Pepper
- 1 Sprig Finely Chopped Spring Onion
- ¼ Cup Frozen Peas
- 1 – 2 Sprigs Finely Chopped Fresh Mint
Method
- Pre-heat oven to 180 degrees.
- Wisk eggs, milk, cheese, garlic, salt and pepper.
- Mix spring onion with peas and mint.
- Add veges to muffin tins then pour egg mixture over the top.
- Sprinkle over feta and cook for 10 – 15 minutes.
- Remove from muffin tins and serve.
- Note: This recipe is best made in larger batches so multiple the ingredients for the portions you desire.
