Mango Pine Slice
Ingredients
Base
- 1 ½ cups almond flour
- 2 heaped tsp coconut oil
- 2 scoops Collagen Switch (Mango Pineapple)
- 1 tbsp sweetener of choice
Filling
- 3 large eggs
- 2-3 tbsp sweetener of choice
- ½ cup almond flour
- Juice of 2 lemons
- Zest of 1 lemon

Method
- Preheat oven to 180 and line a baking tin with baking paper
- Blend all base ingredients together in a food processor until combined
- Press mixture into lined tin
- Place into the oven and bake for 12 minutes
- Remove from the oven and make the filling
- Add all filling ingredients into food processor and blitz to combine
- Pour the filling over the top of the base and place it in the oven and bake for 20 minutes
- Remove from the oven and allow to cool for 30 minutes before cutting into squares
