Mango Pine Slice




  • 3 large eggs
  • 2-3 tbsp sweetener of choice
  • ½ cup almond flour
  • Juice of 2 lemons
  • Zest of 1 lemon

  1. Preheat oven to 180 and line a baking tin with baking paper
  2. Blend all base ingredients together in a food processor until combined
  3. Press mixture into lined tin
  4. Place into the oven and bake for 12 minutes
  5. Remove from the oven and make the filling
  6. Add all filling ingredients into food processor and blitz to combine
  7. Pour the filling over the top of the base and place it in the oven and bake for 20 minutes
  8. Remove from the oven and allow to cool for 30 minutes before cutting into squares
