Peach Yoghurt Bread
Ingredients
- 1 1/3 cup flour of choice
- 1/3 cup coconut sugar
- 1/3 cup maple syrup
- ¼ cup coconut oil
- 1-2 peaches or peach slices from a tin, drained.
- ½ cup blueberries
- ½ cup yoghurt of choice
- ½ lemon zest
- ½ tsp apple cider vinegar
- ¼ tsp vanilla extract
- 1 tsp baking powder
- ½ tsp bi carb
- Pinch of salt
- 1 serve Adrenal Switch - Peaches and Cream
Method
- Preheat oven to 180 degrees Celsius
- Line a loaf tin with baking paper
- Cut peaches into slices
- Sift flour, baking powder, bicarb and Adrenal Switch Peaches and Cream together in a bowl
- In a separate bowl beat oil, coconut sugar, syrup, yoghurt, lemon zest, salt, vinegar and vanilla extract until creamy
- Add dry ingredients to the wet mixture while beating. Beat until combined. Don’t overmix.
- Transfer to loaf tin. Place sliced peaches on top with blueberries
- Sprinkle with powdered coconut sugar, if desired
- Bake for 30-35 minutes or until goldenv
