Chicken & Kale-Slaw Salad

INGREDIENTS

Chicken Breast Strips

Coconut Oil

Garlic Aioli Mayonnaise

¾ cup of Shredded Red Cabbage

¾ cup of Grated Carrot

¾ cup of Shredded Kale

Salt and Pepper

METHOD

  1. Heat pan to a medium to high heat and fry chicken in coconut oil until golden brown. Flip and repeat.
  2. Remove chicken from the pan.
  3. Massage kale in small amount of coconut oil, salt and pepper for 30 seconds.
  4. Mix cabbage, carrot, kale and almonds (if allowed). Then add garlic aioli mayonnaise
  5. Place coleslaw on plate add chicken and serve.
