Egg + Sweet Potato Scramble

Ingredients
- Diced Sweet Potato (cut into 1cm cubes)
- Coconut Oil
- Free Range Eggs
- Egg White
- Shredded Cheese
- ¼ to ½ Small Diced Onion
- ½ - 1 Small Washed Diced Capsicum
- 1 Clove Crushed Garlic
- 1 – 2 Cups Finely Chopped Kale &/or spinach
- ¼ tsp Turmeric
- Pinch Chilli Powder
- Pinch Sea Salt
Method
- Melt butter or oil in a pan over a medium to high heat.
- Add sweet potato and cook until soft stirring regularly.
- Add onion and garlic and cook for 1-2 minutes.
- Add capsicum and kale and cook for a further 1 minute.
- Add eggs, egg white, turmeric and chilli powder and stir until eggs are cooked through.
- Sprinkle with sea salt and cheese to serve.
