Egg + Sweet Potato Scramble

INGREDIENTS

Diced Sweet Potato (cut into 1cm cubes)

Coconut Oil

Free Range Eggs

Egg White

Shredded Cheese

¼ to ½ Small Diced Onion

½ - 1 Small Washed Diced Capsicum

1 Clove Crushed Garlic

1 – 2 Cups Finely Chopped Kale &/or spinach

¼ tsp Turmeric

Pinch Chilli Powder

Pinch Sea Salt

METHOD

  1. Melt butter or oil in a pan over a medium to high heat.
  2. Add sweet potato and cook until soft stirring regularly.
  3. Add onion and garlic and cook for 1-2 minutes.
  4. Add capsicum and kale and cook for a further 1 minute.
  5. Add eggs, egg white, turmeric and chilli powder and stir until eggs are cooked through.
  6. Sprinkle with sea salt and cheese to serve.
