Honey Soy Chicken Stir-Fry

INGREDIENTS

Vermicelli Rice Noodles

Diced Free Range Chicken Breast

Baby Corn

Cashews

½ tsp Soy Sauce

2 tsp Honey

1 Clove Crushed Garlic

1 Tbsp. Grated Ginger

Pinch Chilli Flakes

1.5 tsp Macadamia Oil

½ - 1 Small Washed Chopped Red Capsicum (2cm²)

½ - 1 Small Washed Chopped Green Capsicum (2cm²)

¼ - ½ Small Chopped Onion (2cm²)

Broccoli (desired amt)

1 Sprig Finely Chopped Fresh Coriander

METHOD

  1. Prepare rice noodles by adding portion to a bowl or pot of boiled water. Sit in water for 3 – 4 minutes or until soft and strain from water.
  2. Mix soy sauce, honey, garlic, ginger and chilli into a large bowl and then add chicken.
  3. Place covered in a refrigerator for 30 mins.
  4. Remove chicken from the fridge and sauté over a medium to high heat in oil for 5 mins constantly stirring.
  5. Add capsicum, onion and baby corn and cook for a further 3-5mins.
  6. Put rice noodles in a bowl add chicken mixture and garnish with coriander to serve.
