Pea, Mint and Feta Frittata Muffins

INGREDIENTS

Free Range Eggs

Crumbled Feta

Grated Cheese

100ml Coconut or Almond Milk

1 Clove Crushed Garlic

Pinch Sea Salt

Pinch Pepper

1 Sprig Finely Chopped Spring Onion

¼ Cup Frozen Peas

1 – 2 Sprigs Finely Chopped Fresh Mint

METHOD

  1. Pre-heat oven to 180 degrees.
  2. Wisk eggs, milk, cheese, garlic, salt and pepper.
  3. Mix spring onion with peas and mint.
  4. Add veges to muffin tins then pour egg mixture over the top.
  5. Sprinkle over feta and cook for 10 – 15 minutes.
  6. Remove from muffin tins and serve.
  7. Note: This recipe is best made in larger batches so multiple the ingredients for the portions you desire.
