Salmon + Sweet Potato

INGREDIENTS

Diced Sweet Potato

Salmon Fillet

¼ Sliced Lemon

1 Sprig Finely Chopped Fresh Thyme

Pinch Sea Salt

Pinch Pepper

1 tsp Coconut Oil

1 Handful Washed Green Beans

1 – 2 Cups Washed Snow Peas

METHOD

  1. Pre-heat oven to 150 degrees.
  2. Put sweet potato on an oven tray and drizzle with coconut oil and pink sea salt.
  3. Please in oven to roast for 25 minutes.
  4. Place baking paper on an oven tray. Put thick slices (5mm) of lemon down and then place salmon on top.
  5. Sprinkle salmon with sea salt and pepper and fresh thyme on top.
  6. Bake salmon in the oven for 18-22 mins (alongside the sweet potato) or until nearly cooked right through.
  7. Steam peas and beans.
  8. Remove sweet potato and salmon from the oven. Place on a plate. Put beans and peas next to it with grass fed butter on top and then place salmon and sweet potato to serve.
