Eggs on Avo Smash

Ingredients

  • Diced Avocado
  • Grainy, Turkish or Gluten Free
  • 1 tsp Coconut Oil
  • 3-4 Diced Cherry Tomatoes
  • 1 – 2 tsp Fresh Lime Juice
  • ¼ tsp Vinegar
  • 2 Whole Free Range Eggs
  • 1 – 2 Cups Spinach
  • Pinch Sea Salt
  • Dash Chilli Sauce

Method

  1. Place avocado, coconut oil and tomato in a bowl. Squeeze over lime and mash with a fork.
  2. Heat pan with small amount of coconut oil.
  3. Place eggs on hot pan and cook until desired.
  4. Meanwhile place bread in toaster until golden brown.
  5. Spread avocado & tomato mix on toast then cover in spinach.
  6. Remove eggs from the pan and place on top of spinach to serve.
  7. Sprinkle over some sea salt and a splash of chilli sauce for flavour.
