Eggs on Avo Smash

Ingredients
- Diced Avocado
- Grainy, Turkish or Gluten Free
- 1 tsp Coconut Oil
- 3-4 Diced Cherry Tomatoes
- 1 – 2 tsp Fresh Lime Juice
- ¼ tsp Vinegar
- 2 Whole Free Range Eggs
- 1 – 2 Cups Spinach
- Pinch Sea Salt
- Dash Chilli Sauce
Method
- Place avocado, coconut oil and tomato in a bowl. Squeeze over lime and mash with a fork.
- Heat pan with small amount of coconut oil.
- Place eggs on hot pan and cook until desired.
- Meanwhile place bread in toaster until golden brown.
- Spread avocado & tomato mix on toast then cover in spinach.
- Remove eggs from the pan and place on top of spinach to serve.
- Sprinkle over some sea salt and a splash of chilli sauce for flavour.
