Granola

Ingredients

  • 1 cup cashews
  • ½ cup chopped almonds
  • ¼ cup pumpkin seeds
  • 1 cup shredded coconut
  • 1 tbps coconut flour
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil (melted)
  • 1 Snack Switch Bar (any flavour)

Method

  1. Preheat oven to 160 degrees and prepare a baking sheet with baking paper
  2. In a mixing bowl, stir together nuts and coconut flour
  3. Add in syrup and coconut oil until well coated
  4. Transfer mixture onto baking sheet and spread out in an even layer
  5. Bake for 10 minutes, stir and continue to bake for 10 minutes until golden. Be careful it doesn’t burn!
  6. Remove and let cool
  7. Add in crushed bar
  8. Serve and save the rest in an airtight container
