Iced Coconut Latte Pops

Ingredients
- ¾ cup canned unsweetened light coconut milk
- 1/3 cup sugar
- 2 cups brewed coffee (2 sachets Coffee Switch – Naked Espresso)

Method
- In a small bowl stir together ½ cup of the coconut milk and 1 tbsp of the sugar. Pour into 8 moulds. Freeze for 2 hours until firm.
- In a medium bowl combine coffee, the remaining ¼ cup coconut milk and the remaining sugar. Pour over coconut layer. Insert sticks into moulds. Freeze overnight.
