Roasted Tomato Collagen Soup
Ingredients
- 500g cherry tomatoes
- 5 cloves of garlic
- ½ tsp of mixed herbs
- 1 tbsp olive oil
- 1 ½ cups of stock
- 1 scoop COLLAGEN Switch (Unflavoured)

Method
Add cherry tomatoes, garlic, olive oil and mixed herbs to a baking pan and roast for 20 minutes on 190°c fan forced.
Leave to cool for 10 minutes then add to a blender with ½ cup of stock and COLLAGEN and slowly blend until smooth (be careful when opening blenders with hot liquids).
